Inspired by reading Flour and Water’s comparison between their wood fired oven and hell I thought I would revisit a method I had been working on using a scorching oven and the grill at the same time.

But this time, instead of wasting all that heat and energy on getting the entire oven hot, maybe I could just use the grill to pre-heat a heavy pan to scorching and then use the grill too at the time of cooking.

Here’s how it turned out:

Pizza dough

There’s a whole year’s worth of posts on this. In essence I created a strong flour dough with some olive oil, salt and insta-yeast and let it prove for about six hours to encourage as much flavour as possible.

Try Jamie Oliver’s recipe if you need some guidelines.

Utensils

I’m going to cook two pizzas at once so selected my two sturdiest pans – a heavy bottomed frying pan and a skillet. Make sure they can take the heat and I probably wouldn’t recommend using a new non-stick pan even if it is oven safe.

Good oven gloves! Don’t make my old mistake of recognising the pan handle as something that’s usually ok to pick up (when on the stove top) – it H.U.R.T.S!

Toppings

Trying to watch the calories so I’ve gone for a tomato and non-mozzarella style pizza with some shavings of gran padano cheese. To keep things simple I’m using a carton of crushed tomatoes with basil and oregano (from Sainsbury’s – but no available all over) – I’m going to simmer for a good 15 minutes to reduce and increase the flavour and make it much less runny. I’ve got some nice fennel sausage from the market and some parma ham to go on too.

I thought about the process the producer/director must have been through to pitch the idea.

“It’s set in a museum. Think Jurassic Park but in a confined space. With comedy. And slappy monkeys…”

I’d buy it!

And in some ways, pitching new .com ideas is just like that.

“It’s an editor – on steroids – anyone can use it – millions of people!”

I guess we need to hype it up – but with in reason…..

I love those really cool Swiss typographic layouts where they build almost architectural style layouts using fonts.

Wordle builds great word clouds using blog feeds or chunks of text – whatever you like really – and they nailed the look and feel bit with some really nice fonts to choose from. Love it…
